Hi Martine, yes, we actually have a recipe for a Gluten-Free Sourdough Starter! Unfortunately, you can't substitute this starter and gluten-free flour into a regular sourdough bread recipe. That's because so much of the rise and structure of bread (whether yeast-raised or sourdough) depends on the gluten that wheat flour provides. When making gluten-free sourdough bread you'll need to find a recipe that is written to be gluten-free and use the type of gluten-free flour called for in the recipe. This Gluten-free Sourdough Sandwich Bread recipe is a great place to start.
