This is my first time at making a sourdough starter. I’m now starting on my 3rd attempt. Things appear to go well until day 3 or 4 with some bubbling and a bit of rise then day 4 or 5 the starter develops a thick dry layer (like a skin ) on top, bubbling stops and below this skin the starter is thin and soupy. The skin does not mix in well when stirred so there are lumps. I continue process of discarding all but 4oz of starter and feeding 2X a day for a couple more days with no bubbles or rise. Just the thick skin forms on top and soupy goo below. I’m carefully measuring water and AP flour and watching the temp of my kitchen. Wondering if the bottled water I’m using is non chlorinated or if I’ve overlooked something. Please advise
