When keeping starter at room temperature we recommend feeding every 12 hours, equal parts of all 3 components by weight (as you mentioned in the video, 25 grams of each were used).
For putting the starter right in the fridge, it doesn't harm the starter at all but we find by leaving the starter out to begin fermenting a bit in the warmer room temperature your yeast and bacteria get a bit of a jump start before heading to the fridge to slow down.
There are many factors that determine how strong and bubbly a starter gets, there isn't one single change to bring about big bubbles versus small ones. Try to focus on consistent, regular feedings with good quality ingredients to build and strengthen your starter. Think of it as you leading the starter down the road to a happy and healthy life with regular care and your starter will reward you day after day.
