I've been following this same process for about 2.5 weeks now and my starter is bubbling and smells fine but it is only rising by about 50% over a 12-hour period. My average room temperature is a little bit on the cooler side but some days have been warmer than others and that hasn't made much of a difference. Any tips? I'm excited to bake bread soon and I'm waiting for my starter to be strong enough!
