Any starter should work well on this schedule, Matthew! Sourdough starter is much like keeping a pet; there are some basic best practices and known goals for health and behavior, but the specific methods you use to feed, groom, and train it vary somewhat depending on your personal preference and the quirks of your own (hopefully not furry, in the case of your starter) friend. If your starter is healthy and bubbly, you can certainly keep it in the fridge for a few days without problems. Happy baking!
