Hi, I just started making a sourdough starter from a MasterClass I recently took. In the class, they recommended keeping the starter out after the initial 5-day feed and continuing to feed the starter every 24-48 hours. They stated that you can refrigerate the starter for a period of 3-5 days to pause the growth of the starter. On King Arthur's recipe, it states that the starter can be placed in the refrigerator once the initial feeds have been completed. I would prefer to use the method from the King Arthur recipe for maintaining the starter. Should I start remaking the starter using the King Arthur recipe or will I be ok placing any sourdough starter in the fridge and feeding it on a 5 day schedule? Thank you for your help!
