Hi, I just put my newly built sourdough starter in the fridge this Sunday. I am trying to understand how bake with it. I know I need to:
Step 1: take out of fridge, take out 113g (DISCARD the rest), feed 113 g flour and same of water, let rise.
Step 2: take out what's needed for baking, from the rest take out 113 g and feed again, let rise, then store.
My question is about step 2: why would I not take out however much I need to make bread from the DISCARD, feed it in the 1/1/1 ration, let rise and bake with it. Thank you for your feedback!
