The steps you've listed out are indeed correct, we just wouldn't recommend letting the starter fall completely before storing it in the fridge for a week. When you'll be keeping the starter in the fridge, we recommend feeding it and letting it rest at room temperature for about an hour to allow fermentation to start, then move it to the fridge.
