Hi There!

After trying to many many times (Almost 8) your sourdough starter recipe has worked wonders for me in just 5 days! Usually I would go on and on and on with no results.
I am on my 8th day and the rise and fall are very consistent. It rises almost double and a half within 5 hours and then starts to fall until I feed it again.
I however had a question and I've read over the steps many times yet I just want to make sure I am doing this right.
So today I will use the starter to make my bread. After I take out how much ever I need.
I will
1.) Remove all but 113g of starter.
2.) Add 113g water and 113g flour.
3.) Wait 4/5 hours for it to rise
4.) Put it in the fridge until next week.
THEN Next Week - When I want to make another loaf.
1.) I take out the starter from the fridge (do I allow it to come to room temperature before 2nd step?)
2.) Discard all but 113g
3.) Add 113g Water and 113g Flour
4.) Wait for it to rise.
5.) Use how much ever I need.
6.) Disard all but 113g.
7.) Add 113g Water and 113g Flour
8.) Wait for it to rise again.
9.) Once it's risen - stick it in the fridge.

is the above correct? I ask because other sites (which havne't worked for me) have said to discard all but 113g of starter and stick that straight in the fridge without feeding it.
