Hi, Tim! If you keep your starter in the fridge, you'll want to feed it weekly to keep it at maintenance level. If you plan to bake once a week, you'll want to remove it from the fridge a day early and give it a couple of feedings once every 12 hours so that it's doubling when you want to bake (and also so that you have enough starter to bake with and also retain enough starter to put back into the fridge for next week).
