Hi, Sheridan! For a gluten-free sourdough starter, we'd recommend following this recipe: Gluten-Free Sourdough Starter. It calls for our Gluten-Free Measure for Measure Flour in this recipe not because it contains xanthan gum (which isn't necessary), but because it contains whole grains. Feel free to use whatever gluten-free flour containing whole grains you have access to in Australia in its place. Best of luck, and happy baking!
