Hi, Scott! You might want to try switching out your all-purpose flour with whole wheat flour for a few feedings, and switching from feeding once every 12 hours to once every 24. This can help tweak the pH of your starter to give it a more advantageous environment for growth. Once it's established, it should become less persnickety.
