Hi, Joe! All starters are unique, and it seems like yours likes to take its time in doubling. This doesn't mean there's anything wrong with it, though! If you'd like to speed up the process, you can try keeping your starter in a warmer location. But really, if it's doubling, you're in good shape to bake.
