Hi there, Heidi! It sounds like too much flour is making its way into your cup when you measure, leaving you with a dry (sometimes called "stiff") starter. If you have access to a kitchen scale that measures in grams, that's the most accurate way to measure, but if not, no worries! You can learn more about how to get the right amount of flour into your cup in our How to Measure Flour guide. In the meantime, feel free to mix a little extra water into your starter until it's similar in consistency to pancake batter.
