How tightly or loosely should I cover my starter container? I read in another recipe that it should be loosely covered, and a mason jar with its lid inverted is good. Step 1 says it should be loosely covered, but the subsequent steps just say covered. At any point would you put a tight cover on it, or would it always be loosely covered, even for longer term refrigeration?
Also, should I keep it in the same jar (1 qt mason jar), or should I transfer to a new container when feeding it?
I've had problems with mold and starters getting the funk (and not the good kind) and I'm hoping for better results this time. I sterilized the jar with boiling water before beginning this time. Thanks for your tips and guidance.
