I'm at day ten of my starter. I've followed the instructions closely, using carbon-filtered then boiled (in case of residual chlorine) and cooled water, shaken to re-oxygenate.
I'm keeping the starter in a plastic-covered (one of those elastic bowl covers) glass bowl, at around 70 degrees--on top of a fridge most times, or in a proofing box on cooler nights when household temps drop a few degrees.
It hasn't changed volume AT ALL. About 6 hours after the last feeding it looks like the starter in the proofing box picture, above (the first one under " day 1"). It has a mild tang to it and a pleasant smell. In water, a gob sinks like a rock.
