Debbie, definitely do not start over! Starters take different amounts of time to fully mature. An infection, shown by colorful streaks in your starter, is the only real reason to throw your starter away and start from scratch. In the time it takes to start over from scratch, your own starter is likely to become fully mature. Anywhere between 7 and 21 days is fairly normal.
