I've been attempting to make a starter and I'm feeling quite discouraged! I'm on day 11 and it seems like nothing is happening. I'm getting a few bubbles on top but nothing major. I want to just throw it out and start again! Do you think I should ride it out longer or just start again? I'm using a mixture of your whole wheat and your unbleached AP flour, which are hard to come by at the moment, and I'm afraid I'll run out.
