Hi there, Kae! We'd encourage you to stick with it! Every starter is different and can take various amount of time to become established and predictable in its activity. You can try feeding your starter with some whole wheat flour for the next couple feedings to see if that will give it a little jump start, but we don't think you should give up on this one.
