Susan, that's a good question! You'll want to look at the recipe you plan to make in advance. If you're making our Naturally Leavened Sourdough Bread, for example, you'll need 16 ounces (454 grams) of starter to bake with, on top of the usual amount of starter you'll want to keep in your container (we like to keep 113 grams on hand, but feel free to follow whatever formula you've been using, since it's working well for you). Working backwards, you can then calculate how many regular-sized feedings it will take to bulk your starter up to the necessary size, and plan to start early enough so that you can bake on the day you've planned for.
