Hi Amy! We suppose you could start feeding it with Gluten-Free Measure for Measure Flour, but since the started was made with whole-wheat flour it would never truly be gluten-free. You can make a gluten-free starter from scratch if that's what you're looking for. Happy GF baking! Annabelle@KAF
