Hi there! We suggest using either pumpernickel or whole wheat flour when starting your starter, as they have extra nutrients because the whole wheat berry is included in the flour. If you do give it a go just using a white flour (either All-Purpose or Bread) to start, it may take a little bit longer to get the starter established. Best of luck and happy baking! Morgan@KAF
