Hi Emily! You don't have to switch the container every time, but if you'd like to you sure can. It can be helpful to have a container with clear, clean sides when looking for evidence of rising and falling. We recommend using the lid of the canning jar to cover the starter so that the top doesn't dry out. Just be sure not to tighten the lid all the way so that the gases don't build up inside the jar.
