I made my own sour dough wild yeast starter from KA unbleached flour recipe and advice. Everything went great. I made sour dough buttermilk pancakes once the starter was trippleing in 4 to 6 hours. After it raised again in 4 to 6 hours I fed it again let it sit out a few hours. Just as it was.starting to rise and then put it in the refrigerator for 7 days. On the 7th day I set it out on the counter and let it come to room temp. I fed it like always, but It didn't come back like it was suppose to, or how it was doing before. It only raised about a 1/4 of what it had been before puting it in the refrigerator. I have been feeding it every 12 hours since. Its been 2.weeks now.and it's started to double now, but not trippleing like it did before putting it in the refrigerator. I'm waiting on it to get to where it was before and waiting for it to double in 4 to 6 hours. Can you tell me what happened to my starter when I put it in the refrigerator and why it didn't bounce back like it should have?according to KAs advice on maintaining your starter in the Refrigerator. it had worked perfect before putting it in the frig.
