Hi again. I have another question. on the second feeding of day 7, I substituted an ounce of whole wheat flour for part of the unbleached. Last night and this morning (days 8 and9), I'm finally seeing a good, consistent doubling and lots of bubbles. However, it still smells like flour and water. There's no tangy aroma. Should I keep up the twice a day feedings until I get that? I'm ultimately going to be storing it in the fridge and baking once a week.
P.S. Over the weekend, I made pancakes, crackers, and muffins with my discards, all with good results.
