Hello Simon! One cup of water is 8 ounces both by volume and by weight. A cup of all-purpose flour, which is much lighter than water, only weighs about 4 ounces, 4 1/4 oz to be exact. If you're ever curious about baking by weight, (which we always recommend because it's faster, uses less dishes, and is always more accurate and consistent) we offer a full weight chart in the Learn section of our website under Resources & References.
