Hi Franca, letting the starter rest at room temperature after a feeding allows the yeast to feed or "digest" the fresh food you've just given it. If you put it immediately back into the fridge, the starter won't be quite as amenable to the wild yeast that you're trying to cultivate. If possible, leave the starter out for a few hours at room temperature before putting it back in the fridge (for a few days to a week). It will be happiest if you give it that time at room temperature. Kye@KAF
