For anyone who wants to make GF sourdough starter, first: YES, you can absolutely make sourdough starter from GF flour (it is not based on gluten; it is "based" on wild yeast that exists in the environment). I've made it successfully with brown rice flour, white rice flour, and teff. For more information on this please visit Tara Barker's great website, A Baking Life.
