I have been using a starter since 1992 that my aunt in FL gave me. He's named Fred! It is a potato flake based starter using water, potato flakes, potato water, and sugar to feed . I had no trouble with it while living in MA-got good and bubbly when I was feeding it. Since I've been living in SC Fred hasn't been too peppy. I've tried feeding him more frequently, more than once a week, but that doesn't seem to have helped. Any suggestions? The starter still makes a nice loaf when baked but it's not rising as much and is a more denser bread. Thanks for any help Cindy
