Marianella, that's a lots of sourdough questions! You've come to the right place. We have a full Sourdough Baking Guide on our website, which should answer most of your questions but here is a quick summary: you need to feed your starter once a week if you are keeping it in the fridge (or once every two days if keeping it at room temperature) to keep it alive. You start each feeding by discarding 1 cup and then adding back 1 cup (4 ounces) of flour and 1/2 cup (4 ounces) of water. Let it sit for 2-4 hours and then you can use it in your recipe.
