Had same problem as Scott....ended up with nice round thick dough ball......per instructions I added water - a bit at at time.....now I'm sure I have what you described......used over 1 cup of water to get there......guess I have to change my method of measuring flour!!
Inner temp in house in S. C. Tx about 85.....I should have the sour dough that ate nearby Austin within 24 hours! LOLOL
(oh, thank you all so much at KAF!! I use no other Flour before you!!!:))
