The warning sign that a sourdough starter has crossed the line from sour to gone bad is a change of color. If your starter turns pink or begins to have spots that are a different color from your starter, it's time to toss it and start fresh. If you are worried that the temperature it too warm for your starter, you can either feed it more frequently (once a day for example) or you can store it in the fridge between feedings (once a week). Experiment with your feeding schedule and storage technique to see how it affects the flavor of your bread; you might find just the right combination that produces a tangy sourdough. Good luck!
