I successfully created my sourdough starter following this recipe. It was a great adventure. From day 1 to day 3 everything was just as described and then the process slowed down on day 4 & 5. I was wondering what went wrong. I kept on feeding the starter. On day 6 , I saw the light: expansion, bubbles. I fed the starter up till day 8. On day 9, I baked my first sourdough bread ( rustic sourdough bread) with the help of SAF yeast. But I wanted to make sure that the starter was strong enough to leaven bread. I baked the famous Tartine country bread. The result was a wonderful bread. Right now my starter is relaxing in the fridge. I have named my starter Rosabelle.
