To make a gluten-free sourdough starter, we recommend using our powdered French Sourdough Starter, which will give you the flavorful tang you are looking for while creating an environment where wild yeast (but not mold) will flourish. Then you can follow the instructions for making a Gluten-Free Sourdough Starter, which is posted on our blog. This should help give you a mold-free starter to use in your gluten-free breads.
