Bob, are you using King Arthur Unbleached All-Purpose Flour (not bread flour, all-purpose)? If not, your results may very well be different. If you ARE using KAF, I think you might be weighing it with a "heavy hand." Try fluffing it up before sprinkling into the cup, then leveling off before pouring it into the bowl.
