Thanks for a fabulous post, PJ! I tried making a sourdough starter by a different method earlier this month, but had no luck. I found this post and thought I'd try your way! Monday, April 13 at 4pm I mixed up my ingredients and was thrilled to see a rise of 1/4" by the next morning. I made the delicious sourdough waffles with the 4 oz of discard and fed it starter again. My starter had increased in volume by half about 6 hours after that feeding, so I was very excited. This morning at 7:00, 15 hours into day 2, I noticed the increased amount from last night had fallen by half (a quarter rise still present since feeding yesterday). When I checked it at 18 hours into day 2, it had fallen yet again, until there is only about 1/4" rise above the rubber band marker. Is it normal for it to fall like that? It has tons of bubbles, and seems to be doing well, with a definite aroma. Is it "hungry" and needing to be fed again due to being vigorous? Today at 4pm I am scheduled to begin the twice daily feelings. I am new to sourdough, so any advice or information you could give would be helpful. I apologize if you've already answered this question in another post. I read lots of posts that looked relevant, but this is a very popular article and I didn't get to all of them. Thanks in advance!
