It's wonderful that your starter has so many bubbles! Begin feeding on a twice daily basis now, since the yeast is obviously vigorous and will benefit from a regular food supply (just like us!). When the starter falls, it is because the yeast has exhausted the food supply. When baking, it's generally a good rule to use the starter when it is on the rise, especially if you don't plan to use any other yeast in the recipe. Happy baking! Laurie@KAF
