If you are only refrigerating it for a week, I doubt that this is a sign of mold or spoilage, Angela. You might experiment and try a bottled water to see if the starter is reacting to some of the minerals in your tap water. It may also help to give it a midweek feeding, if the discoloration seems to be related to how long it stays in the refrigerator. I hope this helps.
