The crock isn't going to change the humidity level of the starter, but you might try using a bit less water when mixing the recipes. Then you can add water as needed, as opposed to adding lots of flour to adjust for a sticky dough. A partial rise in the refrigerator can help firm up the dough as well. Happy baking! Laurie@KAF
