Hi Chelsea-
For creating your starter, if you are feeding it everyday, then you can leave it on your counter at room temperature. I would switch over to AP flour after the first few days as that will be the best option for a maintenance flour. In regards to which flour you should use for baking bread, either AP or Bread will often work, but I would recommend using the flour that your recipe was written for.
