Hi, I'm super exited to have found your starter instructions! I was given an established starter long ago which I successfully used for couple of years, but couldn't maintain it and had to throw away when I had my twins. I am ready to start baking again! And I am on day 2 of my starter. When I went to feed it tonight there was liquid separated on top which I know is normal for an established starter out of the fridge, but I didn't think a new starter-to-be should be doing so? I went ahead to stir it back in, and the texture of the batter was strange - sort of like egg whites before you whisk them well. I was surprised as I was expecting a smoother consistency of the water/flour mix. I proceeded to feed as usual with 1 cup KA AP flour and half cup lukewarm water. There was no bad smell and only couple of bubbles though not sure if they were air or any sort of activity. Any advise if the appearance of my starter is normal at this stage of the process would be appreciated! I love your products, site and blog! Thanks!
