Congratulations on such a great baking success! Unless a recipe specifically calls for "unfed" starter, you would always want to use fed starter, usually ideally within 6-8 hours of feeding depending on your kitchen environment. We recommend you take it out the day before you want to use it and give it a feeding in the morning and evening and then feed it once more the next morning to use it for your bread that day.
