Hi Cindy, I would recommend trying the Extra Tangy recipe without yeast the first time you bake it, and see how it rises. There is something so satisfying about making your bread with your very own starter and watching it rise! Magical! But if it doesn't rise quite as much as you would like, there is no shame in adding a little yeast the next time.
