Quick Question: I began my starter about 36 hours ago. I didn't give it the day 2 feeding until the 30 hour mark at which point the starter had doubled from its beginning size. It is now doubling every two hours without any additional feedings. I gave it the day 2 feeding 4 hours ago and have had to stir it down twice to prevent it from overflowing my quart jar. Should I continue the week long process before I refrigerate it or did I luck out and get a strong yeast from the start? A couple of notes: (1) This morning's feeding was with rye flour - I didn't see the AP instructions until after I had fed it. (2) I live at moderately high altitude, ~ 4500 ft. Thanks! -- Laura
