1 cup of flour is 4 ounces by weight. When measuring flour by the cupfuls - be sure to stir the flour, sprinkle into the cup and level, then you'll be closer to that 4 ounces. Scooping the measuring cup into the flour then level won't be the same. If your sourdough is too thick - simply add a tablespoon or two more water to get it to the pancake batter consistency.
