I'm going to start my starter this weekend, but I can't help thinking that "back in the day" before bottled water they used water out of a hole in the ground(a well)...just like I do...couldn't I just use our well water? You certainly can use your well water. However, you will need to take into consideration that the various minerals in your water will change the flavor of your starter. Also, your starter will have a higher risk of possible contamination. If you see any pink or orange in your starter, it won't be good to use.-Jon
