Thanks for this-- it helped a lot! I got out old recipe cards , but when I double-checked for more details online most of those babka instructions have 2 or 3 rises and things I did not recognize. Your recipe is very similar to my mom's. She doesn't use rum sauce but does have rum-soaked raisins (1 cup golden raisins soaked in 2 Tablespoons rum), added to the batter after the rise. For the cheese filling she has : 8 ounces cream cheese; 1/2 cup cottage cheese; 1 egg yolk; 1/4 cup sugar. Cream together. Dollop on top before putting in the oven--it sinks down into the babka batter. Having a go at this one today!
