I'm from Brooklyn, NY and this isn't the type of Babka I grew up with. The Babka of my childhood had some type of soft cheese chunks in it (I think it may be a type of farmer's cheese, that's the closest thing I can find) and it had a texture between a bread and a cake. Your Babka is more like a cake - which I've found in Polish bakeries in Chicago (which would make sense since you're from Wisconsin). Maybe this is a "mid-west" babka recipe. Do you have any recipes for the type of 'Brooklyn' bakba I've described?
