These sound wonderful and I can't wait to try them. If I make these with the mini-cupcake pan, do you think they will come out the same? I realize that I will have to use something smaller to core the mini-cupcakes. The smaller cupcakes seem to go over better in my office since people can grab one from the pantry, pop it in their mouth and still run off to their meeting! I see no reason why you can't do a mini version, though you it may take some patience to fill them. You might be able to core them with a larger straight pastry tip, using the wider end. ~Amy
