Hi there, Ed! We'd recommend using a 9" x 5" loaf pan for both of the recipes you've mentioned. Keep in mind that the baking times will need to be extended as the loaf pan is deeper than a cake pan, skillet, or casserole dish. We suggest baking the breads for the recommended time and then adding time as needed from there. Happy baking!
